Beef ribs came out really mediocre. Chewy on outside, sort of gooey on the inside. Not even all that meaty. 5.4 lb prime 3-rib rack from wild fork foods. Traeger timberline 225F with super smoke. Wrapped in butcher paper at 170 internal and then raised grill temp to 250F, pulled at 205 internal. Rested about 20 minutes (should have been longer maybe? It was still pretty hot). It was meh/10 EDIT: yes, went to what I thought was probe tender (not just temperature, it felt tender at 205f). I spritzed with cider vinegar hourly while not wrapped. Previously frozen, aged Angus Black beef plate ribs, purchased from Wild Fork Foods at $9.98 per pound. Tldr: Seasoned with salt, black pepper, garlic powder, BBQ rub & lemon juice. No binder. Total cook was 8.5 hours + 1 hour rest: 6 hours smoked at 275 with 1:1 pecan & hickory chips. Wrapped at 175 internal after bark was set (temp was not the indicator). Rendered tallow added. Finished in oven for remaining time, also at 275. Probe tender at 205 internal. Rested in cooler for 1 hour. I have made a roasted red pepper shrimp pasta dish in the past that was really good, however I have everything I need to make it except parmesean cheese (didn't realize it went bad until too late and I forgot to get it at the store). I have some frozen morel cream sauce from Wild Fork Foods, can I combine that sauce with some roasted red pepper (and more heavy cream if need be) and make a sauce to put on shrimp and pasta?
