Hi, this is my third attempt at making croissants based on Claire Saffitz’s recipe. The first two were complete failures, but this batch has turned out a bit better. From the photo, how can I improve them? I'm not sure whether they were sufficiently proofed or potentially even slightly underbaked? The interior and bottom layers seem to have collapsed. I proofed these croissants for 2.5h at approximately 75F. I can't really give any exact baking temperatures since I’m using an old gas oven with no temperature controls (only gas marks) that only heats from below and has no fan so temperature control is tricky, but I tried to aim for slightly above 200C using an oven thermometer ...

A bit of a rant but also looking for some insight/opinions. My son (2) has always had a tough time eating. He was exclusively formula fed and had silent reflux, so we switched formulas a few times. And then had no interest in solids, baby led weaning was a bust. He is our first child and as many first-time parents do, we researched ourselves to death over everything including food. We ended up in feeding therapy about a year ago as we thought he had an aversion to certain textures. (If this was ever the case, it is not longer as he has no issue with textures now.) 28M 205lb. For the majority of the last year I’ve been pretty inactive. Busy with work and life and honestly just let myself get pretty lazy. And during all that time of inactivity, my left ankle and knee started to develop a “pop”. It never hurt, it felt good every time I did it. Usually 2-3 times a day if I planted my foot and rotated my hip correctly I’d get some big pops in that ankle and knee.
