For Turkey, I wouldn’t change much : overall, it has a really great climate. I would rather change the topography. The western part of the country lacks water because it doesn’t have high mountains like the east. These mountains store water (as snow) and release it during the summer. As a result, the western regions (especially the Aegean coast) suffer from water shortages, while a large part of the eastern water flows into Iraq and Syria through the Tigris and Euphrates without being fully used within the country.
