I usually buy baby pepper plants from one of the big box stores this time of year. I get overwhelmed by them and a lot of them go bad BEFORE I know what to do with them. Depending on the variety and year for gotten banana (spicy and not), Jalopeno, Thai, chili, etc. I tried making hot sauce last year and totally butchered the one time I tried.
