Several times now I've gone by a spot in Condesa on Alfonso Reyes that has a massive line of people lined up. At first I thought it was the restaurant called El Zoral (Alfonso Reyes & Avenida Tamaulipas), but then I realized there was a food tent on the corner. As I rode my bike by it looked like some kind of sandwich they were making. People were lined up down the entire block and that was about 11am today. Does anyone know what it is? Used LW's biscuit recipe as the base with a few deviations: https://theloopywhisk.com/2021/09/03/extra-flaky-gluten-free-buttermilk-biscuits/ I grated frozen butter instead of cubed butter, added dried chives to the dry ingredients, and on the last lamination added crumbled blue cheese before the fold, then cut the fold in half and stacked to create two layers of cheese. I've also swapped out cheeses like feta, goat cheese, and cheddar in the past and they all work well :) Then I freeze the cut biscuits while the oven is preheating to minimize the butter from leaking.
