I was making a loaf a week for a few months last year, trying to get back into it. It’s been rough re-learning skills I thought I had lol. My loaf this week came out ok, but it’s a little more flat than I’d like. Maybe a lot more flat. I think it over-proofed; the recipe calls for an 18-20 hour room temperature ferment, which I’ve been adhering to, but now I think in my like 72 degree house that should he more of a 12 hour ferment. Started at the beginning of May 2024. The graph is based on periodic weigh-ins over time. Timeline was roughly: Apr 2024 – Oct 2024: Mostly swimming daily with one day-off per week.
