I used to make fantastic (if I do say so myself) vegan crepes following this recipe https://www.theconsciousplantkitchen.com/vegan-crepes-recipe/#wprm-recipe-container-1659. It's not exactly a complicated recipe, I use canola oil instead of avocado oil. Ever since switching to a stainless steel pan (might be a coincidence) I've barely been able to make something that would even qualify as a crepe. They just stick to the pan but never solidify properly, resulting in me scraping off goop. I've tried upping the amount of milk, more heat, less heat, more oil in the pan, less oil in the pan. Anyone able to offer some help?

I’m not vegan, but a few family members are so I want to take both a vegan cheesecake and a traditional cheesecake to our Thanksgiving dinner. I tried just swapping out all ingredients to their vegan alternatives but it didn’t work very well. Cheesecakes never firmed up. Were too liquidy even after 3 hours of baking. Took out cheesecakes and reblended the mixture with 3 tablespoons of corn starch to thicken it up. But after three hours in the oven, it reduced down enough for 1 cheesecake instead of the original 2. Baked it for an additional 30 minutes then chilled in fridge.
