Hello, just looking for some opinions/feedback on the spring/rise. My loafs seem a little flat to me based on some of the amazing examples here. I'm using the Tartine Country Bread recipe with 1000g bread flour instead of 900g bread and 100g whole wheat and I'm baking using the Dutch oven method. https://tartinebakery.com/stories/country-bread I use a 5 month old starter (100% whole wheat) fed at 1:1:1 that doubles in 6-7 hours. This current loaf I even tried to put the dough in the freezer for 10 mins prior to scoring to assist in holding its shape. It totally makes sense that they are vegan. The hive contains so much intelligence that it's obvious they don't want to hurt any other living creatures. My (28f) niece (17f) is really going through a hard time right now and i am trying to instill some hope in her. i want to give her a good weekend to hopefully plant the seed for a good, happy, uninhibited future for herself. what are some good places to take a 17 year old that are not tourist traps, something really unique and authentic? i want to show her a variety of people and a variety of things. id love to show her some good food in a unique environment, live music if possible, and maybe an edgy shop or two. i live on the west side but have a car. thanks all

I'm an ethical vegan who loves nutrition so I follow this sub mostly for veg heavy recipe ideas. However, I keep feeling like this sub has a strong anti oil or anti fat bias (which honestly doesn't seem substantiated by good evidence to me) while seeming to use salt liberally. Personally, I try to eat a lower salt diet for blood pressure control. I know Dr Gregor is popular here and he often speaks about the dangers of high salt diets. FWIW, I’m technically pescatarian not vegan but have been making myself a lot of plant-based meals lately. This is somewhere between a curry, a stir fry and a stew I guess?
