I'm trying to incorporate more vegan dishes into my diet. Many of the shawarma places in my city have these grape leaves stuffed with fish, and it's super delicious. Vinegary but fresh and chewy and filling. I want to try making a cruelty free version I imagine most of the flavor comes from the vinegar and olive oil, so hopefully that'd be easy to replicate. But I'm not sure how to achieve the same texture. It'd be nice to have an alternative that's also a good source of protein, but I can live without that But yeah, I know vegans can be real wizards with food. Any suggestions?
