Most of my dishes cost around £2–£4 to make and sell for £12–£15, which I realised is where most of the profit actually comes from. I ended up writing everything down (recipes, food costing, prep system) just for myself because I run the kitchen mostly alone and needed it to be simple and consistent. My IgA levels were over 250 when I got my first blood test that pretty much confirmed this. From Jan-March, going gluten free seemed like it solved all my issues. No pain, cramps, or even fatigue.
