Long story (somewhat shorter): I had an uncommon called nissen fundoplication in 2021, which results in food being processed extra fast. As a result, I peak probably 25-40 minutes after eating (sometimes sooner), and come down from there. I have been diagnosed with reactive hypoglycemia. I eat very clean, saving (slow) carbs for last.
